These are some of the most amazing, healthy, gluten-free muffins! I make them about every two weeks and over the two weeks I eat these fabulous muffins as snacks.

Here’s the recipe! Enjoy!!

Ingredients

1/2 cup garbanzo bean flour

1 Tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon cloves

1/4 teaspoon ginger

2 eggs

1 can pureed sweet potato

1 cup almond butter or peanut butter

1/4 cup chopped pecans

1/2 cup craisins or other dried berries

1/4 cup maple syrup or you could use 1/8 cup of stevia sweetener

Makes 12 regular sized muffin. Preheat oven to 350°. Mix everything together. Spoon into muffin tray. Bake 20 to 25 minutes, or until lightly browned, and a toothpick comes out clean. Store in the refrigerator.
